7-Course Degustation Menu

An elegant progression of flavour, texture, and technique, our 7-Course Degustation is designed to take you on a journey. It begins with a luxurious amuse-bouche of truffle-infused Parmesan custard and lobster foam, followed by Champagne-granita oysters and pan-seared scallops with lemon butter and pancetta. Rich mushroom risotto with shaved truffle leads into the main event: sous-vide duck breast paired with roasted beetroot and caramelised figs. A bright basil-lime sorbet cleanses the palate before the grand finale—molten chocolate fondant with Madagascan vanilla gelato and gold leaf. Each course is carefully curated to surprise and delight.

An opulent showcase of precision and creativity, the Signature Chef’s Tasting Menu is a seven-course symphony designed for the discerning palate. Begin with a refined Wagyu tartlet crowned with white caviar and truffle aioli, paired with vintage Champagne. Delicate kingfish crudo and rich caramelised foie gras follow, balanced by expertly matched wines. The centrepiece: a charcoal-grilled, dry-aged Wagyu ribeye (MB9+), finished with black garlic jus and crispy leeks. Seasonal fire-roasted maitake mushrooms lead into a bright blood orange and Campari granita, before the final indulgence—Valrhona chocolate soufflé with Madagascan vanilla anglaise and gold leaf. A menu for those who savour every detail.

6-Course Japanese Fusion

A bold celebration of modern Japanese cuisine, this menu fuses traditional flavours with creative flair. Begin with three playful takes on Japanese-style tacos: grilled king prawns with Chalaquita salsa, crispy pork belly bao brushed with house dressing, and tender pulled duck wrapped in betel leaf with plum and hoisin. An elegant sashimi trio (salmon, tuna, kingfish) and Nikkei-inspired nigiri follow, alongside grilled octopus with cauliflower purée and Japanese 5-spice. Enjoy vibrant yasai rolls with seasonal vegetables and pineapple, rich Wagyu tataki with ponzu and fried garlic, and the show-stopping Glacier 51 toothfish—marinated for 72 hours in sakiyo miso and perfectly grilled.
