An elegant progression of flavour, texture, and technique, our 7-Course Degustation is designed to take you on a journey. It begins with a luxurious amuse-bouche of truffle-infused Parmesan custard and lobster foam, followed by Champagne-granita oysters and pan-seared scallops with lemon butter and pancetta. Rich mushroom risotto with shaved truffle leads into the main event: sous-vide duck breast paired with roasted beetroot and caramelised figs. A bright basil-lime sorbet cleanses the palate before the grand finale—molten chocolate fondant with Madagascan vanilla gelato and gold leaf. Seasonal fire-roasted maitake mushrooms lead into a bright blood orange and Campari granita, before the final indulgence—Valrhona chocolate soufflé with Madagascan vanilla anglaise and gold leaf. 6-Course Japanese Fusion

A bold celebration of modern Japanese cuisine, this menu fuses traditional flavours with creative flair. Begin with three playful takes on Japanese-style tacos: grilled king prawns with Chalaquita salsa, crispy pork belly bao brushed with house dressing, and tender pulled duck wrapped in betel leaf with plum and hoisin. An elegant sashimi trio (salmon, tuna, kingfish) and Nikkei-inspired nigiri follow, alongside grilled octopus with cauliflower purée and Japanese 5-spice.
